Our journey begins with the bees themselves. Healthy, thriving bees are the heart of our apiary. We use the Langstroth hive system, which allows us to add honey supers—removable boxes above the brood chamber—so bees can store surplus honey without disturbing their living space. Timing is everything in honey harvesting. We only collect honey during periods of abundant nectar flow, ensuring bees have more than enough reserves for themselves. Our harvest is selective: only frames that are at least 80% capped—meaning the honey is fully ripened and moisture content is low—are chosen. We use escape boards or gentle air blowers, never chemical boards, to move bees out of the honey supers. This non-invasive method respects the bees’ space and reduces colony stress, a practice shared by other leading sustainable apiaries. Sustainable Beekeeping Practices

Traditional Extraction: Preserving Raw Goodness

Once the honey-filled frames are in our honey house, we begin the extraction process. First, we carefully uncap the wax seals from the honeycomb cells using a heated knife or uncapping fork. This wax, rich in honey, is set aside for further draining and often used to make candles or balms.

Throughout this process, we never apply heat or aggressive filtration. Our honey is strained through a coarse filter to remove large debris while retaining pollen, enzymes, and beneficial nutrients.
